For my GCSE Food and Nutrition exam I have been
practising making home made mayonnaise, which
has left me with loads of egg whites! The solution?
Egg white cookies! And these are gluten free as well.
150 g sugar
3 tablespoons unsweetened cocoa powder
pinch of salt
1 large egg white
1/4 teaspoon vanilla extract
50 g chocolate chips/raisins
This recipe is for one egg white4if you have more,
just scale up the other ingredients
Pre heat the oven to 180C
Sift together the sugar and cocoa
powder, then stir in the salt.
Use a spoon to stir in the egg white
and vanilla extract. The batter should
be thick but loose.
Stir in the chocolate chips/raisins.
Using two spoons, scoop onto non
stick paper, and let sit for 30 minutes
to form a `skin9 .
Bake for 10 -12 minutes4the top
should be shiny and cracked.
Allow to cool before eating!
