Peter Chang comes to Columbia
Nominated for James Beard award, Chinese chef to open restaurant this fall
At age 58, Peter Chang is not about to slow down.
During an interview to discuss the upcoming launch
of a new restaurant in Columbia, Chang, dressed in chef’s
whites, leaps up from a table to offer me, his wife and a
friend bottles of water.
In another moment he jumps back into the kitchen of
his Bethesda restaurant, Q By Peter Chang, to help his staff
as they prepare a massive carryout order for the upcoming
Dragon Boat festival, an ancient Chinese holiday that falls
in late spring. Even when he sits back down, he remains
in constant motion, twiddling a metal bottle cap with his
fingers until it’s bent.
Chang doesn’t speak English, but certain things don’t
require translation. When asked whether he has any plans
to retire, a broad smile creeps across his face. He laughs and
shakes his head.
