pan-fried salmon with fresh winter salsa

Winter Salsa
½ cup pomegranate seeds
1 seedless cucumber
1 jalapeño, deseeded and diced
¼ cup fresh cilantro, finely chopped
¼ cup red onion, diced
1 lemon, juiced
¼ cup feta crumbles
1. Simply combine all ingredients in a bowl and set aside while
preparing the salmon.
Pan-Fried Salmon
2 Tbsp olive oil
2, 4-ounce salmon filets, skin on
Salt and pepper to taste
1. Bring salmon to room temp, about 10 minutes, before cooking.
Blot dry to remove excess moisture.
2. Warm large nonstick skillet with oil over medium-low heat.
Season fish with salt and pepper and raise the heat to mediumhigh.
3. Place the seasoned salmon, skin side up, in the pan and cook
until golden brown, about 4 minutes. Turn fish over and cook
until it firm to the touch, about 3 minutes.
4. Plate salmon and top with the salsa and rice and veggies as
desired.
