spiked eggnog
MAKES 4 SERVINGS
Per serving: 162 calories | 5 g fat | 4 g protein | 1 g net carb
INGREDIENTS
3 cups unsweetened almond milk
1 vanilla bean
2 large eggs
¼ cup Stevia (or preferred sweetener)
1 tsp cornstarch
1 tsp each ground cinnamon, nutmeg, and cloves
6 ounces spiced rum
INSTRUCTIONS
1. Heat 2 ½ cups milk in a medium saucepan. Split vanilla bean
lengthwise, scrape out seeds, and add pod to saucepan. Simmer
over medium heat.
2. In a large mixing bowl, whisk together eggs, Stevia, and
cornstarch until mixture is fully incorporated.
3. Whisking constantly, add one cup of the heated milk at a time
into egg mixture. Once fully incorporated, pour mixture back
into the saucepan.
4. Place saucepan back over medium heat and stir constantly with a
wooden spoon until mixture starts to thicken. Immediately
remove from heat, stir in remaining ½ cup of milk, and displace
vanilla pod.
5. Add rum or whiskey and serve warm or chilled. Garnish with a
cinnamon stick or dashes of ground cinnamon, nutmeg, and
cloves as desired!
