crustless spinach quiche
ENJOY 6 SERVINGS
Per serving: 250 calories | 15 g fat | 21 g protein | 6 g net carb
INGREDIENTS
1 Tbsp olive oil
1 Tbsp minced garlic
½ cup chopped onion
½ cup chopped asparagus
½ cup chopped ham
2 cups spinach
6 eggs
1 cup low-fat milk
1 cup shredded mozzarella
Salt & pepper to taste
INSTRUCTIONS
1. Preheat oven to 350°F.
2. Heat a large pan over medium heat. Once hot, add olive oil,
garlic, onion, asparagus, and ham and sauté for 5 minutes.
Add spinach and cook until wilted. Remove from heat.
3. In a bowl, whisk together eggs, milk, cheese, salt, and
pepper. Stir in ham and veggie mixture. Pour egg mixture
into a greased pie dish, and bake uncovered for 40 minutes,
or until the center has set.
4. Allow to cool before removing from the dish then cut into 6
slices.
