maple cranberry yogurt parfait
MAKES 4 SERVINGS
Per serving: 290 calories | 8 g fat | 21 g protein | 32 g net carb
Yogurt
2 cups nonfat Greek yogurt
Zest of 1 orange + juice
½ tsp vanilla extract
½ tsp cinnamon
1. Add all of the ingredients to
a bowl and stir to combine.
Set aside.
Nutty Oat Mixture
½ cup old fashioned oats
1/3 cup pecans, chopped
1 Tbsp maple syrup
¼ tsp sea salt
1. Add ingredients to a bowl
and combine.

Omit the Nutty Oat Mixture to
reduce 6 g net carb per serving!
Cranberry Sauce
1 bag (12 oz) cranberries,
fresh or frozen
¼ cup 100% maple syrup
Zest of 1 orange + juice
Water as needed
1. Heat large skillet over medium
heat then add orange zest and
juice, maple syrup, and half the
cranberries.
2. Cook mixture until cranberries
begin to burst, about 10
minutes, stirring frequently.
3. Add remaining cranberries and
cook an additional 10 minutes.
If mixture looks dry, add 1
tablespoon of water at a time
until desired consistency is
reached.
4. Remove from burner and set
aside.
How to Assemble
1. Layer yogurt in the bottom of a glass followed by a layer of cranberry.
2. Add an additional layer of yogurt then sprinkle the nutty oats atop.
