Berry Baked Oatmeal Casserole
Serves: 8 / Prep Time: 10 mins / Total Time: 50 mins
Instead of traditional oatmeal made in a pot/slow cooker, try this Berry Baked Oatmeal
Casserole. It will not dissapoint!

1. Preheat oven to 375°F.
2. Spray a 10x10 casserole dish generously with cooking
3. In a large bowl, mix oats, baking powder, cinnamon, salt,
dates, molasses and half the berries. Stir well and pour
into casserole dish. Add the other half of the berries to the
top of the mixture. Then, slice the banana and add to top.
4. In a separate bowl, combine milk, egg, butter, & vanilla.
Whisk thoroughly. Pour on top of oatmeal mixture, making
sure the all oats are soaked evenly.
5. Bake for 35 minutes. Then let casserole cool.
2 cups oats
1/4 cup molasses
1 tsp baking powder
1 tsp cinnamon
½ tsp salt
½ cup diced dates
1/4 cup maple syrup
1 cup strawberries
1 cup blueberries
1 ripe banana
2 cups milk
1 large egg
2 tbsp butter (cooled)
1 tsp vanilla
Blackstrap molasses is digested more slowly in
the body, which helps to stabilize blood sugar
