Blueberry Oatmeal Muffins
Serves: 12 muffins / Prep Time: 10 mins / Total Time: 35 mins
These blueberry muffins are always a big hit, and blueberries are super nutritious.
Ingredients
Directions

1. Preheat oven to 350° F.
2. Coat muffin tin with cooking spray or liners.
3. Combine flour, oats, baking powder, baking soda and salt
in a bowl.
4. Combine yogurt, eggs, butter, vanilla, applesauce and
honey in a second bowl.
5. Fold yogurt mixture into dry mixture; stir to combine completely.
6. Gently fold in blueberries.
7. Spoon into muffin tins.
8. Bake until top is golden, 20-25 minutes.











2 cups whole wheat
flour
1 cup oats–quick or
regular oats
2/3 cup apple sauce
1 tsp baking powder
1 tsp baking soda
1/2 teaspoon salt
1 cups plain Greek
yogurt
1/8 cup honey
2 large eggs, lightly
beaten
4 tbsp unsalted butter,
melted and slightly
cooled
1 tsp vanilla extract
1 cup blueberries
Using Greek yogurt as a binding agent in these
muffins is an excellent way to add extra protein.
