Mini Egg & Cheese Burritos
Serves: 16 / Prep Time: 5 mins / Total Time: 20 mins
These burritos are perfect for sneaking in vegetables first thing in the morning.
Ingredients
Directions



1. In a pan, cook the eggs with the butter, stirring constantly,
until the eggs are slightly runny (about 3 minutes).
2. Add spinach and cook until wilted.
3. Take them off the heat and season with salt and pepper.
4. Fold in half of the cheese and the chopped peppers.
5. To build the burritos, divide the mixture among the center
of the tortillas and top with the remaining cheese.
6. Fold up the bottom third of the tortillas, fold the ends in
towards the center and continue rolling to a small cylinder
shape.
7. Serve immediately.




8 eggs, lightly beaten
2 tsp butter
salt and pepper, to
taste
1 cup cheese, shredded
6 tbsp chopped bell
peppers
16 handfuls of spinach
16 mini whole grain
tortillas
With this recipe, make 16 mini burritos or opt
for regular sized whole grain tortillas for heartier
breakfast.
