energy for many months. These delays, estimated by the ‘watchdog’ group
Net Zero Watch, are likely to cost the average consumer an additional £300
per year, and have resulted in hugely increased reliance on fossil fuels
during this period.
We are experiencing a spell of still, calm weather as I write. Many of the
huge wind turbines will be standing idle. In contrast, traffic flows on busy
roads continue unabated through 365 days of the year. If only we could
harness this free source of energy with a creative, joined-up nationwide
campaign.
When the wind doesn’t blow the traffic still flows.
RECIPE OF THE MONTH

Oriental Chicken and Nectarine Salad
Delicious easy summer lunch dish to serve with baby new potatoes
serves 8 – 10
Ingredients
6 large chicken breasts
4 nectarines
6 spring onions
8oz /225 grams mange tout shredded
4 tablespoons chopped coriander
Dressing
Rind and juice 2 limes
2 tablespoons runny honey
2 tablespoons light soy sauce
6 tablespoons sunflower oil
Salt and pepper
Method
Poach chicken breasts in water with bay leaf and when cool cut into
strips.
Slice nectarines quite thinly and add to chicken with mange tout, spring
onions and coriander.
Whisk all sauce ingredients together and add to chicken mixing well.
