Okay, so a quesadilla is just a tortilla with cheese inside and then heated in a frying pan until
the cheese is melted. You don’t really need a recipe. What you do need are tips that make it
restaurant quality.
First, there are two ways to construct a quesadilla, and our way is the best. Many people
choose to sprinkle the grated cheese and fillings entirely over one tortilla and then cover
with a second tortilla. This is not advisable because it makes it hard to flip the darn thing
without having all the fillings fall out. We suggest spreading the filling over half of one tortilla
and then fold to form a semicircle. Neat, compact, and easy to flip.
Second, there are two tricks you can use that will make your quesadilla taste amazing. The
first is to use medium-heat and plenty of oil. We suggest about two tablespoons for a 10-inch
skillet. Using plenty of oil means nice, even browning and crispy tortillas. The other trick is
to keep it moving while it’s cooking. Like a good grilled cheese sandwich, it’s best to let the
quesadilla cook long enough so the cheese is thoroughly melted and the outside is nice and
evenly brown.
Once the quesadilla is done cooking, allow it to rest on top of a couple of paper towels for a
minute and then cut it into triangles. Why triangles? Well, they just taste better.
