Vegetable Fritters
Ingredients
Fritters:
1 large zucchini, shredded + squeezed of liquids
3 small Gwillimdale Farms carrots, shredded
1 Gwillimdale Farms potato, shredded + sqeeuzed of liquids
1/2 medium Gwillimdale Farms yellow onion, finely chopped
1 garlic clove
1 cup AP flour
1 teaspoon of each garlic powder, paprika and Italian seasoning blend
Salt and pepper to taste
2 eggs, lightly beaten
1/2 cup shredded mozzarella cheese
1/4 cup freshly grated parmesan cheese
1/4 cup olive oil or avocado oil
Yogurt Dipping Sauce:
1/2 cup full fat yogurt
1 tablespoon of chopped chives
1 tablespoon of freshly chopped parsley
1 clove of garlic, minced
Salt and peper to taste
