Red Onion Mini Galettes
Ingredients
Parmesan Black Pepper Pastry:
1 ¼ cups all-purpose flour
⅓ cup Parmigiano Reggiano, shredded
1 tablespoon fresh ground pepper
½ teaspoon of salt
½ cup cold unsalted butter, cut into cubes
¼ cup cold water
Egg Wash:
1 large egg
1 tablespoon of water
Red Onion Filling:
1 tablespoon of olive oil
2 Gwillimdale Farms red onions, halved
and sliced
½ teaspoon of salt
2 cloves garlic, sliced thin
¼ cup red wine vinegar
1 teaspoon of brown sugar
2 tablespoons of Dijon mustard
Whipped Goat Cheese:
140g goat cheese, softened
1 tablespoon of honey
Chives for serving
Lemon zest for serving

These petite pastries feature red onions slowly caramelized and kissed
with red wine vinegar enveloped in a parmesan black pepper pastry. The
tiny tarts are finished with dollops of goat cheese whipped with a hint of
honey and garnished with fresh chives for a refreshing herbal note. Piled
