Parsnips Tarte Tatin
Ingredients
2 teaspoons of olive oil
1 Gwillimdale Farms red onion
½ teaspoon of thyme dried
½ teaspoon of sugar
3 Gwillimdale Farms parsnips
1 puff pastry (all-butter puff pastry)
Directions
1. Preheat the oven to 400 degrees.
2. In a 10” skillet, heat oil over medium/high. Add in the onion, thyme and sugar,
and cook until the onion is softened for about 8 minutes.
3. Season with salt and pepper.
4. Reduce heat and spread onions evenly on the pan.
5. Add sliced parsnips in an even layer, cover, and cook until almost tender,
about 8 minutes.
6. Trim pastry into a circle and add to skillet.
7. Bake until pastry is puffed and golden, 20 minutes. Let cool on a wire rack,
for 10 minutes and then invert.
