Easy Apple Cake with
Cream Cheese Icing
From the sound of jingle bells playing off the
piano to the smell of mulled wine on the
stovetop, the holidays are all about celebrating
the senses. Every holiday season in our home is
christened with this delicious, mouthwatering
apple cake. Passed down from my grandmother
to my mother and then to me, this recipe was
first discovered off of an apple pie filling can
back in the 1950s. It's super easy, with less
than ten minutes of prep time and another
five minutes to whip the cream cheese icing.
As the cake bakes, the top caramelizes,
creating an amazingly crunchy bite which
you'll then top with cream cheese icing once
cooled. It’s guaranteed to become a holiday
family favorite.
Cake
1 - 20oz can apple pie filling
2 cups flour
2 cups sugar
1/2 cup vegetable oil
2 eggs
2 teaspoons cinnamon
2 teaspoons baking soda
Icing
1 stick room temperature butter
1 block of 8oz cream cheese
1 teaspoon vanilla
2-3 cups confectioners sugar
Preheat oven to 350 degrees. Butter 9 x 13 inch pan. Dump apple pie filling into
a bowl and chop up apples randomly with knife. Add everything else to bowl
and stir until well mixed. Pour into prepared pan and bake for 50
minutes. It will be dark if you look at it early, but leave it in.
When cooled, top with icing.
