ALL THE SHROOMS SOUP
INGREDIENTS
600g of fresh mushrooms - shiitake, enoki, button, your
choice!
2 dried lions mane mushrooms (optional)
2 tsp of cordyceps & chaga extracts
1 carrot
1 onion
2 sticks of celery
1 litre of vegetable stock
1/2 cup coconut cream
METHOD
Saute finely chopped carrot, onion and celery in olive oil until
fragrant. Add chopped mushrooms both fresh and dried and
saute for about 10 minutes. Add in the vege stock and cook
for 15 minutes. Add in any herbs for flavour and season with
salt. Take off heat and wait to cool.
Add in mushroom powders and coconut cream and blend
until smooth in a high speed blender.
Reheat and serve!
