Guacamole really is the ideal appetizer. It’s quick and easy, and it’s extremely versatile. It’s great with chips as an appetizer, and it goes great with so many of our favorite
foods. Try it on top of a quesadilla, with tacos, or on top of a burger. It’s also a great
excuse for making margaritas.

1. Cut avocados in half lengthwise. Remove the
pits and save for later. Scoop the flesh out of
the avocado skins and add to a large bowl.

4 ripe avocados
3 tablespoons freshly squeezed
lemon juice (1 large lemon)
8 dashes hot sauce
1 small red onion, cut into small
cubes
1 large garlic clove, minced
1 teaspoon kosher salt
1 teaspoon freshly ground black
pepper
1 medium tomato, seeded and
cut into small cubes
2. Immediately add the lemon juice, hot sauce,
onion, garlic, salt, and pepper and toss well.
3. Mash with a fork until you get the
consistency you want.
4. Add the tomatoes. Mix well and use a chip
to test. Add more salt, pepper, or hot sauce if
desired.
notes and tips
To avoid browning, put the pits back into the guacamole and gently press plastic wrap against
the surface of the guacamole until just before serving. Guacamole will keep in the fridge less
than 24 hours.
