Southwestern Avocado
& Black Bean Salad
There’s nothing more boring than the same old salad, but this salad is anything but
boring. This salad is quick, yet simple to make, and it will even make the vegetarians
happy at any potluck. It’s even easier if you buy the pre-washed, pre-chopped lettuce.

1/2 cup freshly chopped cilantro
leaves
1/4 cup extra-virgin olive oil
2 tablespoons freshly squeezed lime
juice
2 or 3 dashes hot sauce
Salt and pepper, to taste

4 cups chopped romaine lettuce
2 avocados, peeled and cut into bitesized chunks
2 cups canned or frozen corn kernels,
thawed and drained
2 (15-ounce) cans black beans, rinsed and
drained
1 cup chopped cherry tomatoes
3/4 cup (3 ounces) grated pepper jack

method of crafting
1. To make the dressing: In a small bowl, whisk together the cilantro, oil, lime juice, hot sauce,
salt, and pepper.
2. To make the salad: In a large serving bowl, add the lettuce, avocado, corn, beans, tomatoes,
and cheese. Pour the dressing on top and toss well.
