7UPCake
Unless you’re from the Deep South, you’ve probably never had a 7UP cake. Basically,
it’s an old-fashioned Bundt cake that tastes like a little slice of sunshine. This is the
traditional go-to dessert for many God-fearing, Southern women, and they serve it
at every Sunday supper and church barbeque. Before you know it, this recipe will
become a favorite of yours as well. It’s a show-stopper that’s perfect for celebrations,
but easy enough for everyday occasions as well.

1-1/2 cups softened butter
3 cups sugar
5 eggs, room temperature
3 cups all purpose flour
2 tablespoons lemon extract
3/4 cup 7UP

3 1/4 cups confectioners’ sugar
2 tablespoons lemon juice (plus 1–2
more, if needed)
1/4 cup cold 7UP
method of crafting
1. Preheat oven 325 degrees Fahrenheit. Grease a 12-cup Bundt cake pan well with oil or
butter,
2. Cream together butter and sugar on high speed. Stop to scrape down the sides of the
bowl. On medium speed, add the eggs one at a time. Next, add the lemon extract and then
stop to scrape down the sides of the bowl again.
3. Add flour and mix on low speed for about one minute or until just blended. Don’t overmix.
Fold in the 7UP by hand.
4. Pour the batter into well-greased Bundt pan. Bake at 325 degrees for one hour to one
hour and 20 minutes. Make sure to test the cake before removing it from the oven. When
it’s done, a toothpick inserted into the cake will come out clean. When done, let cake rest in
the pan for about 10 minutes, and then turn cake over onto a plate or platter to remove from
pan.
5. While the cake is baking, make the glaze. Beat together the confectioners’ sugar, lemon
juice, and 7UP. Beat until smooth.
