cultivar’s flesh is FOS. It is among the highest in
the world, and the cultivar is now known to the
world as cultivar New Zealand.
The consistency of New Zealand yacon prebiotic is
as high as 80 °Bx, of which, up to 60% is natural
FOS. FOS is a kind of complex carbohydrates that
pass through the digestive system without being
metabolized, as the human system doesn’t have
an enzyme to hydrolyze FOS. Therefore, it is good
for people concerned about blood sugar levels.
