H2O is the resort’s culinary showpiece, the first
restaurant in the Maldives branded by a 2 stars
Michelin Chef. Located in the middle of the lagoon,
guests take a short boat ride to enjoy an incredible
dining experience six metres below sea level,
immersed in the wonderful and colourful sea life
of the Maldives. The seven-course signature menu
created by a well-known Italian Michelin-starred chef
Andrea Berton features starters of plateau royal de
fruits de mer plancton flavoured with lemon grass,
chickpea potage simmered in king prawn boullion
followed by main dishes of truffle carnaroli risotto
with Maldivian lobster tartare and low temperature
cooked sea bass with smoked green pea foam.
