Chickenless
Adobo
a comfort food, minus the chicken

head cauliflower
block of tofu, pressed
cloves garlic, minced
inch ginger, minced
cup rice vinegar
tbsp soy sauce
tbsp sesame oil
Thai chilis, sliced
tsp brown sugar
bay leaves
cup vegetable broth
salt and pepper to taste
Chop cauliflower into large pieces and tofu into planks,
then season generously with salt and pepper before
searing separately. Flip every 5 minutes and continue
cooking until most sides are golden brown, then remove.
Mix remaining ingredients, then add to the empty pan
and cook, covered, for 5 minutes. Return cauliflower and
tofu to the pan and stir.
Serve with rice and garnish with green onions and
sesame seeds.
For a thinner sauce, add more water or vegetable stock.
